On grades:
I teach evening courses for City University, and must give grades (or I
don't get paid). The courses I teach tend to be the math and technically
heavy courses. What I do, which seems to work fairly well (under the
constraints of the environment) is:
I give the work an initial grade after it is turned in. On the night it is
turned in, I do go over any requested problems by the students. They
following week I turn back the assignments with grades. Then the students
may rework any problems they missed, and receive back 50% of any credit they
loss, assuming they do it right the second time.
This policy has allowed me to actually assign slightly more probing
questions without fear of driving grades down, and the students like having
the second chance and the associated feedback.
