You'll want to plot the data in time order of completion. Just as you said, when you plot in time or of request date you get wide variation in the beginning and then a small tail because the data doesn't contain tranactions that have not yet completed. If you plot in time order of completion you will only be looking at the process behavior shown by tranactions that have actually gone all the way through the process.
In short, I think you might get a good view using the XmR if you calculate Repair Cycle Time as [Repair Complete Date - Customer Request Date = Repair Cycle Time] then plot that data in the Time Order of Completion Date.
